This is one of the most amazing recipes ever. It's taken from a cookbook called "Homemade baking" my Mum got me from America and even though it's a bit long winded and has quite a few stages in it, the end result is something that resembles what my dreams are made of. Lemon Meringue, in a cake.

This isn't the first time I've baked them but I'm making them for my friends to see if I can rival Tash's perfect cupcakes. Wonder if it'll do the trick?
